Lemony Kale Salad

Not a fan of kale? Well let me introduce you to my famous Lemony Kale Salad. You will love all the flavor this recipe has to offer. Roasted walnuts, with lemon olive oil dressing and the nutty bite of parmesan cheese. Kale is a super food and is a great addition to a healthy diet. It stays well even with the dressing on it in the fridge for up to 3-5 days. No soggy greens here! Try it out and you won’t be disappointed, I promise!

Yields: 4 servings

Ingredients:
1 tbsp. lemon zest
Juice of 1 lemon or 3 tbsp. of lemon juice
1/4 cup extra-virgin olive oil
8 cups coarsely chopped kale, ribs removed
1/2 cup /grated/shredded parmesan cheese
1/3 cup toasted walnuts, coarsely chopped roast in a fry pan with 1 tsp. of olive until lightly browned
Coarse salt and freshly ground black pepper

Directions: In a large bowl, whisk together lemon zest, lemon juice, and olive oil until well combined. Add kale and toss to coat. Add parmesan and walnuts; season with salt and pepper. Toss before serving. Top with grilled chicken, salmon, or shrimp.
